This steak is cut from the beef tenderloin, part of the short loin primal and therefore also known as a tenderloin. It is greatly desired for being the most tender cut of beef. The extreme tenderness of these steaks comes at a cost sometimes of the flavor. The majority of the flavor of a steak comes from the marbling within the cut of meat. Typically the tenderloin will have less fat content therefore correlates to the amount of flavor. Tenderloin steaks are best cooked hot and fast and benefit from their time on the grill.
